Lentils make an almost complete nutritional part of the diet. It is very high in all the B vitamins, as well as many essential minerals such as iron and others. Halloumi is a briny cheese made from a white cheese that is a mixture goat and sheep milk, or even with cow's milk added sometimes. It is available in most local markets. Top it with thinly sliced zucchini, grilled or roasted heirloom tomatoes, and a sprinkling of micro-greens for a beautiful and very healthy dish.

Shepherds pie is always a hearty favorite, and even if you are vegan, you can enjoy it with lentils. Stir fry some mushrooms with spicy lentils, add vegetables of your choice, and you have a hearty filing. Top it with mashed sweet potatoes and add a crumb topping. Add spices to your taste. With a little creativity, you can come up with many dishes. You can experiment and discard any you don't like, as lentils are so cheap.
