The cajun cuisine, originally from French, can be prepared very simple and easy since the ingredients are just available locally. There are three pots in this meal. One pot is for the main dishes, one pot for special sausages, steamed rice, and seafood dishes, and the last pot for the vegetables. Two most common staple meat dishes are pork sausages and shrimps. In the history, this type of food was originally developed by the poor people like the farmers and the refugees.

The spices that are usually present in this type of cuisine are bell peppers, onions, and celery. These are three favorite vegetables that adds flavor to the cuisine. These are being called as the Holy Trinity by most chefs. Other usual ingredients are cayenne pepper and garlic. Today, to make this food a lot more easy, a cajun flip n fry product was made available. This is used for breading fish, chicken, shrimp, or even vegetables.

A boudin is another favorite dish. A boudin is a kind of pork sausage which is composed of rice, green onions, pork liver, garlic, and many other spices. Boudins are made daily because even if these are kept for a longer time in freezers, still, it would not be good after a few days. The boudin is more soft in its consistency and placed in a natural casing unlike other sausage variety. This is usually served with rice dressings.

Gumbo, jambalaya, and rice with gravy are three of the most popular dishes locally. A jambalaya is consists of rice, chicken meat or beef meat, and some seafoods like shrimps or crawfishes. However, other ingredients like green peppers, onions, celery, tomatoes, and as well as hot chili peppers are also found. Some other additional ingredients and spices are optional.

One of the favorite lists in cajun cooking is the gumbo, a type of soup. The term gumbo comes from original word okra, one of the main ingredient for a gumbo recipe. Okras are being used to thicken the food and as well as enhancing the vegetable taste.

The meat will be cooked longer for it to be more tender.

In some traditional events, people will boil potatoes, onions, corns, and crawfish in large pots mixed with some other ingredients and seasonings. In this event, the attendees are encouraged in sucking the head of the crawfish. This is done by separating the abdomen and sucking its fat or juices.

Another type of event is the food event in outdoors. The farmers in rural areas are the host. The activities include dancing, eating, drinking, playing games, and many more. The men will slaughter hogs and will cook it as the main dish and the women make boudins.
