Americans have had a long love affair with ice cream, and it's been a presidential favorite since Thomas Jefferson was president. James Madison's wife, Dolley, declared it should be served at her husband's inaugural supper, and Ronald Reagan was the president who declared the July would be National Ice Cream Month. On average, each American will eat about 48 pints of creamy, delicious ice cream each year.

While the dairy industry estimates that 9% of all the milk produced in the United States goes toward the creation of ice cream, milk and sugar are not the only significant ingredients in ice cream. Air is actually extremely important and makes up about 40% of the volume in a pint or gallon of ice cream. The reason why air is such a big ingredient is because ice cream is actually whipped and this incorporates air, just as it does with whipped butter or whipped cream.
